Dr. Fantini joined the Exercise Physiology Program at UT-Austin in August of 2024 as an Associate Professor of Instruction. She has over 15 years of teaching experience at the collegiate level. Besides her impact in the classroom, she has an exceptional track record in the administrative space working as a department chair and through curriculum review, outcomes assessment, and academic program development.

Dr. Fantini previous faculty appointment was at Iowa State University as an Associate Teaching Professor and Director for the Exercise Clinic. While at ISU outside of the classroom, she served as a leader and mentor. In the Faculty Senate she was the Chair for the Outcomes Assessment Committee and mentored students in the field of STEM.

Dr. Fantini research interest is related to dietary intervention looking at how the natural source Açai Berry affects delayed onset muscle soreness. The focus is to use this powerful anti-inflammatory and antioxidant agent to improve performance and increase adherence to exercise and physical activity.
